I’m house sitting at Robert’s and, amazingly, this time they actually have food. I decided to get a little creative because lean pockets just weren’t hitting the spot tonight. They had some leftover ham n beans in the fridge and some rice in a separate container. The beans were good by themselves, but I was feeling a little gutsy… needed to do something more. Fried rice would have been good, but I’m not going to the store for anything. I browsed the freezer and found frozen hamburger and frozen vegetables galore. Why not mix all of this shit together? Done.
I cooked the hamburger in the skillet, added the frozen veges, still frozen, and then topped them off with the beans. I let them simmer for a bit and then finally added the rice and cooked for an additional ten minutes.
Just think of it as a shepherds pie subbing rice instead of potatoes and no crust. Pretty damn good actually.
Bonus! Plenty left over for tomorrow.

Sounds fab, minus the meat of course. I’m a great fan of leftover concoctions: “student food” as we call it over here. I always throw leftover veggies into some kind of pasta dish, always great. Especially broccoli. Yum

We call this goolash. We use elbow macaroni, not rice and I’ve never tried it with a medley of vegetables, but I bet it was good.
